Potato Latkes

Sweet Potato Pancakes with Apple Walnut Topping
Use the shredding blade of food processor for easy shredding.
Is about 18 pancakes
6 cups chopped peeled sweet potatoes (yams) 1 / 4 cup of universal flour 1 / 2 teaspoon baking powder 1 / 8 teaspoon ground cinnamon 1 tablespoon honey 1 large egg 2 large egg whites
Apple Walnut Topping (recipe below)
1. In a bowl, combine chopped sweet potatoes, flour, baking powder, cinnamon, honey, eggs and egg whites with a fork until well mixed.
2. Heat nonstick skillet coated with nonstick cooking spray, and drop about 2 tablespoons of dough (about 3 inches each) in a hot frying pan. Flatten slightly with a spatula and cook the pancakes over medium heat until golden brown on both sides. Set the cooked pancakes on a plate and continue cooking until all dough is used. Serve with apples Walnut Topping.
